Delicious side dish for chicken or seafood.
Preheat oven to 425ºF. Spray a small baking dish and set aside.
In a bowl, add rice, lime zest and juice, and scallions. Gently mix together and form rice patties. Coat with panko and place in the baking dish. Drizzle with sesame oil and season with salt and pepper.
Bake 10 minutes until nicely browned. Plate, garnish with sesame seeds, and serve. We love these with baked lime chicken. Enjoy!
