Quick and easy lime coconut rice that is the perfect side dish, and a great way to liven up your usual plain rice!
In a large saucepan over medium heat, melt butter, then add rice and cook, stirring, for 1–2 minutes. Add coconut milk, water, salt, pepper, lime juice and zest and bring to a boil. Reduce the heat to low, cover and cook for 15 minutes.
Remove the pan from the heat and let stand for 5–10 minutes. Fluff the rice with a fork and enjoy!
