A healthier version of our beloved mashed potatoes!
Cut potatoes into 1 1/2-inch pieces. Place chopped potatoes in a large pot and cover with cold water and 1 tablespoon add salt. Bring to a boil, turn heat down to medium low and simmer for 20 minutes. Drain potatoes and return to hot pot. Add in buttermilk, Parmesan and butter. Mash until you reach your desired consistency. Place in a serving bowl and top with chives. Salt and pepper to taste.
