Light and super flavorful side dish with any main entrée.
Preheat oven to 375ºF.
In a large mixing bowl, add chopped spinach, lemon juice and zest, onion, garlic, black pepper and salt. Mix well and transfer into a baking dish. Pour vegetable stock over the top and add bread crumbs evenly across the top. Drizzle melted butter on bread crumbs.
Bake 12–14 minutes.
This is a great side dish with chicken or fish!
