Description

Protein rich quinoa, paired with zesty lemon and sweet roasted peppers. Quinoa is what I call couscous’ cousin. It’s very versatile and can be dressed up however you like.

Ingredients

  • ¾ cups Plain Quinoa
  • 1-⅓ cup Chicken Broth
  • ¼ cups Lemon Juice
  • ⅛ cups Extra Virgin Olive Oil
  • ⅛ cups Lemon Juice
  • ¼ cups Fresh Parsley, Roughly Chopped
  • 1 clove Garlic, Minced
  • ¼ cups Roasted Red Peppers, Chopped
  • Salt And Pepper (to Your Tasting)

Preparation

1. In a medium sized saucepan bring quinoa, chicken broth and 1/4 cup of lemon juice to a boil. Then reduce to simmer, put the lid on, and cook for 10-12 minutes or until quinoa is light and fluffy. When done remove it from the heat.

2. In a small bowl, whisk together 1/8 cup lemon juice, olive oil, parsley, garlic and roasted red peppers. Add salt and pepper to your liking.

3. Stir lemon mixture into the cooked quinoa. Serve warm.

I really, REALLY wanted to like this. I thought for sure it would be a home run … lemon? peppers? favorable reviews? But the reality is you can’t taste ANYTHING but the lemon. It’s just a big, in your face punch.
I have other quinoa recipes that I want to try but if I come back to this one (and I might, because I still can’t believe that it didn’t turn out fabulous) I’ll cut the lemon back by at least half, if not more.

Made this last night and it turned out great! I used chopped fresh tomatoes instead of the peppers since I didn’t have any on hand.
