Juicy ripe tomatoes stuffed with Italian sausage stuffing.
Preheat oven at 350ºF. In a large skillet, cook Italian sausage and set aside. In a large pot, melt butter on medium heat. Combine onion, celery and garlic and cook until tender, about 5 minutes. Add chicken broth and stuffing, remove from heat and stir until combined. Add salt, pepper and Italian seasoning to the stuffing mixture. Add Italian sausage to the stuffing and stir until combined.
Add stuffing to each tomato and put in a large casserole dish. Sprinkle mozzarella cheese on top of each stuffed tomato. Bake in the preheated oven for 15-20 minutes until cheese is bubbly and golden brown.
Remove from the oven and serve.
