Description

Fresh (or frozen/thawed) green beans sauteed with onion, garlic and fennel seed, topped off with toasted pine nuts. I sometimes toast the pine nuts when the green beans are just about done in the same pan (push green beans to one side, add and toast pine nuts and stir together before serving)side

Ingredients

  • 2 pounds Green Beans
  • Salt and Pepper
  • ½ teaspoons Garlic Powder
  • 1-½ Tablespoon Olive Oil
  • 2 cloves Garlic, Minced
  • ½ cups Onion, Thinly Sliced (about 1 Small Onion)
  • 1-½ teaspoon Fennel Seed
  • ¼ cups Pine Nuts, Toasted

Preparation

If using fresh, rinse green beans – leave moist and sprinkle with salt, pepper and garlic powder. (Thawed frozen will already be moist)

Heat olive oil over medium-high heat in a large skillet. Add green beans and stir fry for a few minutes.

Add garlic, onion and fennel seeds, and continue cooking until green beans are tender-crisp.

Garnish with toasted pine nuts when serving.
