Roasted carrots sweetened with a touch of honey and vanilla.
Preheat the oven to 425ºF.
Mix the honey, vanilla, and thyme in a small bowl. Set aside.
Scrub the carrots well, and (if possible) leave the skin on. Cut the ends off the carrots, and then cut in fourths by slicing in half lengthwise, and then each half into half lengthwise.
Drizzle olive oil on a baking sheet (lightly), lay the carrots on the sheet in a single layer, then drizzle evenly with the honey mixture. Season with salt and pepper.
Bake at 425ºF for 20 minutes, or until tender.
