After a quick boil, all you have to do is slice them and throw them on the grill.
Place potatoes in a pot of water, bring to a boil and cook until fork-tender, let cool. This will take about 30 minutes for medium sized potatoes or longer for bigger. When done remove potatoes from the water to a cutting board. Slice each potato lengthwise in half.
Preheat a grill to medium or place a cast-iron grill pan over medium heat. Mix 1 tablespoon salt, the lime zest, pepper and cayenne in a small bowl.
Brush the potato wedges with the oil and season with the salt mixture. Grill until golden brown on all sides (including the skin) and just cooked through, about 1 1/2 minutes per side. Transfer to a platter, immediately drizzle with honey and sprinkle with cilantro.
For and added kick sprinkle with some extra cayenne pepper!
