These homemade wedges are very easy to make. A favorite in our family. You can use any spices and herbs you like. I use herb d`Provence or Italian seasoning.
Heat oven to 375ºF. Wash and pat dry potatoes.
Cut potatoes in half. Halve each potato half, then cut in half again. You should end up with 8 long wedges from each potato.
Spread parchment paper on a baking tray. Place potatoes on the tray. Pour oil and sprinkle the salt, pepper and herbs. Mix with your hands so that all the wedges are covered. Spread in a single layer.
Place in the oven and bake for 1 hour or until golden and potatoes are done. Enjoy!
