Description

I’m always looking for a different side dish to make and this one comes together and takes care of both the vegetable and potato!

Ingredients

  • 12 ounces, weight Potatoes (about 3 Small Russet Or 5 Red Potatoes)
  • 2 cups Chicken Broth
  • ½ pounds Green Beans, Ends Trimmed
  • ½ Tablespoons Dried Minced Onion
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Onion Powder
  • 1 dash Paprika
  • 1 dash Salt
  • 1 dash Pepper
  • 3 pieces Green Onions, diced

Preparation

1. Take a large skillet with a lid and spray surface with cooking spray. Turn heat to medium and add potatoes. Flip after 5 minutes and brown the other side.

2. Pour in about half the chicken broth or until potatoes are about half-covered with broth. Cover and allow to steam over medium/low heat 5-10 minutes until liquid is almost absorbed.

3. Add the remaining broth or halfway up potatoes again. Add green beans, minced onion, garlic powder, onion powder and paprika. Stir. Replace lid and allow to steam 5-10 minutes. Once veggies are cooked through, turn up heat and reduce broth. As it thickens, stir to coat the veggies.

4. Season with salt and pepper. Top with diced green onions (I of course skipped this step!).

This recipe was even better than I expected. I paired this with a grilled Ham Steak, and it was excellent. I omitted the dried and green onion due to limited ingredients, and it definately did not seem to lack it. Also I added the powders to taste instead of 1/2 tsp. Excellent, simple, full of flavor recipe. I will definately add this to my fav. recipes!
