Description

Three different types of potatoes, fresh herbs and garlic.

Ingredients

  • 2 whole Sweet Potatoes Or Yams, Scrubbed Clean And Peeled
  • 2 whole Yukon Gold Potatoes, Scrubbed Clean And Peeled
  • 2 whole Red Potatoes , Scrubbed Clean ( I Always Leave The Skin On These)
  • 1 Tablespoon Olive Oil
  • 2 sprigs Fresh Rosemary, Chopped
  • 2 sprigs Fresh Thyme, Chopped
  • 1 sprig Fresh Marajoram, Chopped
  • 2 sprigs Fresh Dill, Chopped
  • 1 whole Onion, Chopped
  • 3 cloves Garlic, Smashed And Minced
  • ½ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • ½ sticks Butter

Preparation

Preheat oven to 4oo degrees F.

Chop potatoes into 1 inch cubes and place in a mixing bowl with olive oil, fresh herbs, onion, garlic and salt and pepper. Transfer to a 13×9 baking dish bake for 15 minutes. Remove from oven stir and dot with butter. Return to the oven for another 15 minutes or until the potatoes are fork tender.
