When I am grilling a piece of steak, chicken or fish, I like to make my sides on the grill as well. This is a simple preparation with virtually no clean up. The potatoes cook perfectly in a foil packet. This recipe is quick, simple and packed with flavor from the zesty horseradish. It’s the perfect accompaniment to a piece of lean beef.
Preheat grill to medium high.
Rinse and dry the potatoes. In a medium bowl, combine the potatoes with the olive oil and seasonings. Pour the seasoned potatoes onto a large sheet of aluminum foil. Keep the potatoes in a single layer and seal the foil packet completely.
Place the foil packet on the grill and cook for 15 minutes. Turn the packet over and cook for another 30 minutes. Remove from the grill and open up the foil packet. Serve warm.
