Green Rice Casserole

Description
This recipe is for the rice casserole that was served at the Stephenson’s Cider Mill/Apple Farm Restaurants – there were three in Missouri and one in Bella Vista, AR. They had many memorable items, but this was one of the best. Just delicious.
Ingredients
- 2-½ cups Cooked Rice
- ¾ cups Chopped Fresh Parsley
- ⅓ cups Grated Sharp Cheddar Cheese
- 3 Tablespoons Chopped Green Bell Pepper
- ¼ cups Chopped Onion
- 1 clove Garlic
- 12 ounces, fluid Evaporated Milk
- 1 whole Large Egg, Beaten (use Two If Small)
- ⅓ cups Canola Oil
- 2 teaspoons Salt
- ¼ teaspoons Lawry's Seasoned Salt
- ½ whole Lemon, Juice And Grated Rind
- Paprika
Preparation
Mix rice, parsley, cheese, onion, green pepper and garlic in greased 2 qt casserole. Stir in remaining ingredients. Sprinkle with paprika.
Bake at 350 degrees F for about 45 minutes or until the consistency is that of a soft custard.
