This recipe is easy enough to make on weeknights and fancy enough to make for guests on the weekend.
Preheat oven to 400ºF. Put potatoes in a large bowl and season with olive oil, salt, pepper, and thyme. Toss to coat all potatoes.
Layer 1/3 of the potatoes in a 8×8 in baking pan. Sprinkle with 1/3 goat cheese. Repeat with the remaining two layers. Cover with aluminum foil and bake for 35-40 minutes or until the potatoes can be easily pierced with a fork.
