I made this recipe for my mother who loves the Mexican marinated version and only kept 1/4 of the vegetables for myself. BIG MISTAKE! I wish I had kept all of them to myself. They were amazing and the Oregano was a nice change of flavor.
My only change in the recipe is I used all the vegetables listed and then made another half batch of vegetables. I kept the seasoning/oil mixture the same. I think the extra vegetables were a good idea otherwise they may have turned a bit soggy for me. Also, these taste better after sitting for 48 hours (or more). They were a bit too salty after only 24 hours.

Very tasty and easy. I added in zucchini too. And increased the Jalapenos.

This is so good; an excellent side to replace those “high calorie” chips! I will be making my second batch today!

In the recipe you say celery salt but in the directions you say celery seed? Please let me know which! Thank you!

I absolutely love giardiniera! I usually buy it in jars from our local Aldi store, but I’d love to try my hand at making it. Thanks for the recipe!
