Description

Super easy, crockpot mashed potatoes.

Ingredients

  • 1-½ pound Small Red Potatoes
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Olive Oil
  • ½ teaspoons Salt
  • ¼ cups Water
  • ¼ cups Chive And Onion Cream Cheese
  • Milk, As Needed To Reach Desired Consistency

Preparation

1. Cut potatoes so they are all roughly the same size, and place in a 3-4 quart slow cooker. Add garlic, oil, salt and water, tossing to coat.
2. Cook on high for 3-3 1/2 hours.
3. Mash the potatoes in the slow cooker, and mix together with any resulting juices. Add the cream cheese and stir in enough milk to make it your desired consistency (if you need it).

These can be held in slow cooker for up to 2 hours, on warm.

I left a lengthy review on the review page but forgot to mention I just used plain cream cheese and it was still a huge hit.

I made these today for Sunday dinner with several families from church. I quadrupled the recipe filling my largest crock-pot. They were a huge hit and I only had a small bowl of them left. I will definitely be making these again. I served them with London Broil and fresh stir-fried veggies from the garden.
