Red potatoes are smaller than the usual russet potatoes that I use, and the red potatoes skin is smoother. While I like to use russet potatoes when I am making mashed potatoes or french fries, red potatoes are best for pan-fried potatoes or these oven-roasted red potatoes. They are crispy with tons of garlic flavor, making them a delicious way to eat potatoes.
Preheat oven to 400ºF.
Dice potatoes into 1-inch cubes. Place into a large plastic bag and add olive oil, minced garlic, salt, pepper and garlic powder. Shake bag to evenly coat potatoes.
Spread potatoes out into a single layer in a large baking dish. Bake for 40–45 minutes.
