Description

Roasted potatoes that are perfectly crispy on the outside and tender on the inside!

Ingredients

  • 1-½ pound Baby Red Potatoes, Scrubbed And Cubed
  • 2-½ Tablespoons Olive Oil
  • 2 cloves Garlic, Minced
  • 1 teaspoon Onion Powder
  • Salt To Taste
  • Pepper To Taste

Preparation

1. Preheat oven to 425ºF.
2. Place potatoes on a baking sheet with a lip, such a a jellyroll pan/half sheet.
3. In a small bowl, stir together the olive oil, garlic, and onion powder. Drizzle over the potatoes. Stir or gently shake the pan to coat the potatoes with oil.
4. Sprinkle with salt and pepper to taste.
5. Bake for 30-40 depending on the size of the potatoes, until tender. Stir every 10 minutes to allow for even cooking. Serve warm.

I made these in my roaster and they came out perfectly! Transferred them to a Pyrex dish and added frozen green beans and cooked bacon bits along with cream of mushroom soup. Placed in microwave on high for 5-7 minutes.

This is delicious! I thought the oil wasn’t enough, but it is perfect. Very easy and goes with any meal.
