Delicious fried rice with edamame, mushrooms, raisins and pineapple.
Chop the mushrooms, scallions, pineapple, and matchstick the carrots.
On medium heat warm up sesame oil, saute garlic, ginger and scallions for 1 minute until fragrant. Add mushrooms cook for 2 more minutes until slightly softened. Add rice, raisins, pineapple, carrots, edamame and 1 Tablespoon of soy sauce. Cook for about 5 minutes or until the vegetables become soft and the rice starts sticking to the pan.
