I only recently discovered the joy that is falafel after moving out to the West Coast. They’re easy to make, and are addictive!
Puree beans in a food processor. Add everything but flour and mix well. Taste and adjust seasonings. Starting with 2 tablespoons flour, combine until you can roll dough into a ball that doesn’t fall apart while frying (try a small bit at a time to test). Roll into gumball-sized balls, and fry until golden brown.
