Rice with Mexican style flavors.
Cook rice according to package directions.
Saute the onion in the butter or margarine in a skillet over medium heat till softened. Put Mexican stewed tomatoes in the blender to cut down the chunks to smaller sizes. Add to the skillet. Then add the Rotel (tomatoes and chilies). Mix well. Then add the rice and mix again. Add your salt and pepper to taste.
Put in a casserole dish and bake at 350ºF for 30 minutes. Add cheese during the last 5 minutes. Serve.
