A good use for leftover rice. I forgot to add the egg but you can add it if you like. The garlic chili sauce makes it a bit spicy. You can add more or less to taste.
Heat the oils in a large fry pan or wok. When it is hot, add the onion and garlic. Stir for a few minutes so the garlic doesn’t burn or get stuck to the bottom of the pan.
Grate the carrots into the pan. Cook with the onions until everything softens.
Add your rice and stir it around until it gets hot. Add in the peas and corn and cook until they are hot. Season with salt, pepper, ginger, soy sauce, and garlic chili sauce.
