Totally stole this recipe from my mom because it is one of my favorites and I always thought it must be complicated because it’s so tasty—but I guess butter makes things taste great even without a ton of effort!
This is the perfect side dish because it takes about 5 minutes of prep work, then you just leave it in the oven for an hour while you get the rest of the meal prepared!
Preheat your oven to 350 degrees.
Spray a medium-sized casserole dish with cooking spray. Add the butter and put in the oven for about 5 minutes, allowing the butter to melt completely.
Once butter has melted, add beef consomme, French onion soup, and rice. Stir to blend.
Cook for 45 minutes – 1 hour until rice has absorbed liquid and is cooked through. The onions from the soup will rise to the top, giving you a nice topping.
This recipe is the perfect complement to a nice piece of red meat.
