This is a great rice side dish.
Cut all veggies into bite size pieces and saute over medium heat until cooked but not mushy. Add veggies to the cooked rice. Season with bay leaves, thyme and garlic salt, and simmer for 15 minutes. (Remove bay leaves before serving.)
