Description

An easy and delicious way to eat veggies!

Ingredients

  • 1 bunch Asparagus (mine Had About 30 Spears)
  • 2 whole Egg Whites
  • 1 cup Seasoned Panko Bread Crumbs
  • ¼ cups Flour (I Used Whole Wheat Pastry)
  • ¼ cups Parmesan Cheese
  • Salt And Pepper

Preparation

Preheat oven to 425ºF. Lay a wire rack on a baking sheet and coat with nonstick spray.

Snap off the tough ends of each asparagus spear. On two separate plates, add the eggs whites (lightly beaten) in one, and the panko, flour, and cheese in the other. Season the panko mixture with salt and pepper if desired. Coat each asparagus spear in egg whites, then lay in the panko mixture and thoroughly cover. If the panko won’t stick, dip back in the egg whites and roll in panko once again. Lay each spear on the wire rack.

Bake at 425ºF for 15 minutes, or until golden brown and crispy.

I made these last night. They were amazing! We made two batches and added some garlic to the second batch which worked well as an add-in. Easy, tasty, and healthy. I’ll definitely be using this recipe a lot.

I made these last night as a side dish – YUMMY and EASY. My husband says that they would make a great snack or party appetizer!

I’ve learned to love asparagus over the last few years and so was REALLY excited to try this recipe. Unfortunately, I only had plain Panko on hand and made the fatal mistake of not adding any additional seasoning to the mixture so these came out a bit on the bland side for me. But I’m gonna give them another try soon!

I’ve never liked asparagus, so I hoped that this recipe would help change my opinion. I tried to like them, I really did. But I still don’t like asparagus. I do have intentions of using this recipe on broccoli!

great recipe. made these tonight and dipped them in a little ranch dressing. going to make again to encourage my 5yo to try asparagus! I might add some spicy kick to them next time too.
