These dressed up potatoes are perfect for a simple meatloaf dinner and fancy enough to stand beside your Holiday Lamb!
I never do the same thing twice . . . so next time I make these they won’t be the same. But this time they turned out perfectly delicious and went super with the bacon wrapped meatloaf that we had for dinner. So I thought I’d share them!
Peel and dice potatoes. Place in a large saucepan, cover with water, add salt if desired. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes are cooked through and soft.
In a small bowl mix Parmesan cheese and rosemary herbs (I crush the herbs by rolling them in my hand before adding) until blended. In a small saucepan or microwave dish soften cream cheese. Melt the butter and blend with the cream cheese. (I did this by adding the butter to the partially softened cream cheese and microwaving again for a few seconds…not a fan of extra dishes!).
Drain the potatoes, blend the cream cheese/butter mixture and the Parmesan cheese mixes in and mash into the potatoes. Then… Enjoy!
Most of my cooking is based on ish’s! So you may have to adjust seasonings, etc. to your taste!
