Simple risotto with flavors of tomato, mushroom, and herbs.
Heat the olive oil in a medium pan on medium heat. Add the onions and saute until translucent.
Add rice, stirring for about 2 minutes. Add all seasonings and stir to combine.
Add 1/2 cup broth and 1/2 cup soup and stir until all the liquid is absorbed.
Add tomato paste and sun dried tomatoes, if using.
Add the rest of the liquid, 1/2 cup at a time, constantly stirring, until all liquid is absorbed.
If the rice is not done, add more broth and stir until done.
