Corn Salad made with fresh corn on the cob.
In a large skillet melt butter over medium-high heat. Add corn and cook, stirring occasionally until corn is roasted, about 10 minutes.
In a large bowl, combine red onion, vinegar, olive oil, basil and corn and mix well. Add salt and pepper to taste.
Serve warm or cold.
