When I eat it, I always feel a little naughty. It’s like I’m eating dessert first. The warm creamy consistency and slight sweetness make it seem like dessert, but it’s not. So you can call it dessert, if that’ll get your kids to try it. I know they will love it.
Preheat your oven to 350 degrees. Spray a small casserole dish with nonstick spray.
In a medium bowl, beat the egg. Stir in sugar and corn.
Place the butter and cream cheese in a small glass bowl. Microwave for 30 seconds to melt. Stir into the corn mixture.
Crush the crackers, and add them to the corn mixture. Stir well, and pour into the casserole. Top with cheese (optional).
Bake for 35-40 minutes or until bubbly and beginning to brown.
