Delicious rice and beans variation, great with Mexican and Caribbean food or even on its own!
In small saucepan bring rice, coconut milk and water to a boil. Once it boils, reduce heat to low, cover and cook for approximately 15 minutes, stirring occasionally.
When rice is very sticky and only a little bit of liquid remains, stir in the black beans. Continue cooking the rice until all the liquid has been absorbed and rice is cooked through.
Remove from heat and stir in cilantro, lime juice and salt.
