Description

A delicious and cheesy broccoli side dish. I get asked for the recipe every time I make it for someone.

Ingredients

  • 14 cups Fresh Broccoli Florets
  • ½ cups Butter
  • ½ cups Flour
  • 1 cup White Onion, Chopped Fine
  • 1 teaspoon Fresh Garlic, Finely Chopped
  • 3 cups Milk (2%)
  • 6 cups Swiss Chesse, Grated
  • 2 cups Sharp Cheddar Cheese, Grated
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 whole Eggs, Beaten
  • 2 cups Medium Cheddar Cheese, Grated

Preparation

Preheat the oven to 375 F.

Pull out a large stock pot and fill it halfway full with water. Put in on the stove on high heat and let it come to a boil. When water has come to a boil, add the broccoli and cook for 7 minutes. Remove from heat. Drain the broccoli into a colander and rinse under cold water.

In a large pot on medium heat, melt the butter. As soon as it’s melted add the flour and whisk together and cook for about 5 minutes and keep whisking it. Add onions and garlic and sauté on medium low heat with flour mixture for a few minutes, until onions start to soften.

Add the milk and whisk until mixture is smooth and starts to bubble. Add Swiss cheese, sharp cheese, salt and pepper and turn heat down to low. Keep whisking until all the cheese has melted. Turn heat off and add the beaten eggs. Whisk the cheese mixture until all the beaten eggs are mixed in. Add broccoli and mix well.

Spray a 13 x 9 x 2″ pan with non-stick cooking spray. Pour broccoli mixture into pan. Sprinkle with the medium cheddar cheese. Bake at 375 F for 30 minutes or until bubbly and browned on top.
