Cauliflower Fritters with Tzatziki Sauce

Description

Cauliflower and potatoes are pan fried and served with a simple tzatziki sauce. It doesn’t get better than this!

Ingredients

  • FOR THE FRITTERS:
  • 1 package (10 Oz. Size) Steam In Bag Cauliflower
  • ½ cups Chopped Onion
  • 2 Tablespoons Flour, All Purpose
  • 2 Tablespoons Garlic
  • ¼ teaspoons Salt
  • ½ teaspoons Black Pepper
  • 1 teaspoon Oregano
  • 1 Tablespoon Lemon Zest
  • 1 cup Refrigerated Hash Browns
  • 1 cup Shredded White Cheddar Cheese
  • 2 whole Eggs, Lightly Beaten
  • 2 teaspoons Olive Oil
  • FOR THE SAUCE:
  • ½ cups Plain Greek Yogurt
  • 2 Tablespoons Grated Cucumber (peeled And Seeded)
  • ¼ teaspoons Salt
  • 1 teaspoon Garlic
  • 1 teaspoon Lemon Juice
  • ¼ cups Crumbled Feta Cheese
  • 4 Tablespoons Chopped Kalamta Olives

Preparation

Prepare cauliflower according to package directions. Place cauliflower in a bowl and mash with a potato masher. Stir in onions, flour, garlic, salt, pepper, oregano, lemon rind, potatoes, cheese and eggs. Form into 8 patties.

Heat oil in a large skillet. Cook patties in batches, 4 minutes on each side.

Combine sauce ingredients in a bowl. Serve with fritters along with feta and olives.

I’m always looking for recipes for cauliflower and this one is VERY good. A great combination of tangy, zesty, and with a tiny bit of heat.
I will recommend letting the cauliflower cool before adding the eggs to it.

The tzatziki sauce is outstanding.
