Throughout the Carolinas, red rice is a favorite, either as a side or a meal if you’re generous with the sausage. As I’ve posted before, rice is one of our Carolina roots and rice is a popular dish in my house. My Lowcountry sweetie says this is as good as his Mama’s so I’m posting it with pride! Simple and tasty and the most of the ingredients are always in my pantry.
Brown slices of sausage in oil. Add onion, garlic and ½ teaspoon salt. Cook until onion is softened.
Add water, tomato paste, remaining 2 teaspoons salt, brown sugar and black pepper. Let simmer 20 minutes.
Add rice and stir. Transfer to a 9×13 pan and bake at 350ºF for 35-40 minutes.
