Description

Classic southern veggie.

Ingredients

  • 2 packages 16 Ounce Packages, Fresh Okra (From Produce Market)
  • 2 whole Large Eggs, Beaten
  • 1 cup Plain Bread Crumbs
  • 1 whole Small Yellow Onion, Finely Diced
  • ¼ teaspoons Black Pepper
  • 2 Tablespoons Sweet Cream Butter
  • 2 Tablespoons Canola Oil
  • ½ cups Grated Parmesan Cheese
  • ½ cups Low Sodium Vegetable Stock
  • ¼ cups Sour Cream
  • 2 Tablespoons Whole Milk
  • ½ cups Mayonnaise
  • ¼ teaspoons Each: Parsley, Thyme

Preparation

Preheat oven to 400 F.

Rinse fresh okra and cut into 2″ pieces. In a large pot of boiling water cook okra for 10 minutes. Then drain it in a colander and set aside to cool down.

Beat the eggs in a large mixing bowl and add the pieces of okra. Coat well with egg wash.

Onto a plate add plain breadcrumbs. Roll okra pieces in the breadcrumbs getting a nice coating on the pieces.

Into a 9 x 12 non-stick baking dish (or use cooking spray to coat a regular baking dish) add breaded okra in a single layer.

In a small bowl add finely diced onion, black pepper, butter, oil and Parmesan cheese. Mix with a spatula. Sprinkle mixture to cover breaded okra in the baking dish. Add vegetable stock into the dish.

Bake uncovered for 15 minutes at 400 F.

For the sauce: In a mixing bowl, add sour cream, milk, mayonnaise, parsley and thyme. Stir well and refrigerate until serving.

Serve cold sauce with the okra and enjoy!
