Black-eyed peas bring good luck, and these have some good flavor with bacon and diced green chiles!
Begin by cooking the bacon in a large pan, until crispy. Remove the bacon and place on a paper towel-lined plate.
Chop the onion and cook the onion in the bacon grease until soft, about 3-4 minutes. Add the black-eyed peas, Rotel, and water. Season with salt and pepper.
Cook approximately 1 hour or until beans are tender. Crumble the bacon and add in during the last 10 minutes.
