Sweet and tangy grilled zucchini. Roast it right on your grill for wonderful flavor and no clean up!
In small bowl whisk vinegar, oil and honey. Slice zucchini and place in 1 layer in a pyrex dish. Season with salt and pepper. Pour dressing over zucchini, turning to coat. Let marinate for at least 30 minutes up to 2 hours.
Preheat grill on high and then turn down to medium. Spray grates to grease. Lay zucchini directly on grill. Cover and cook 4-6 minutes (time will depend on heat and thickness of zucchini). When zucchini has distinct grill marks and is softening, turn over. Cook an additional 3-4 minutes until cooked through. Serve immediately.

As my garden is now producing mass quantities of zucchini, we decided to give this a try for dinner tonight. It was delicious! We only marinated the zucchini for 30 min., and it was good, but I think that it would be a lot better if we had more time. We will be making this again. Thanks for the recipe!

I make this all the time minus the honey, YUM! My husband who doesn’t even like zucchini will eat it when I grill it like this.
