Description

Recently, my boyfriend managed to convert me, a die-hard squash purist, to the sweeter possibilities! This recipe combines sweet brown sugar and butter with smokey, salty bacon, a perfect compliment to squash on cool fall evenings.

Ingredients

  • 1 whole Acorn Squash
  • 2 Tablespoons Butter
  • ¼ cups Brown Sugar
  • 1 dash Salt
  • 1 dash Cayenne Pepper
  • 2 slices Bacon (cooked)

Preparation

Preheat the oven to 350 degrees.

Cut the squash in half and scoop the seeds and pulp out with a large spoon. Place the two halves of the squash open-side down in a baking dish. Add about a quarter inch of water to the pan. Your goal is to steam the squash.

Bake the squash for 30 minutes.

Remove the partially cooked squash from the oven and drain the water. Flip the halves over so that the open side is now on the top.

To each squash add the butter (cold is fine, it will melt), brown sugar, salt and cayenne pepper. Crumble the bacon and sprinkle it over the top.

Bake the squash for an additional 30 minutes. Serve warm.

We loved this! My 18 month old daughter ate an entire half of an acorn squash and she has severe feeding issues. My 3 boys who have decided they hate all squash loved it and were all begging for more! Thank you!

I am a convert. I can no longer say, “I don’t like any cooked orange vegetables.” With the addition of a little bacon and cayenne, I have found a preparation for acorn squash that I not only like, but will make again! Thanks for the recipe!

Best acorn squash recipe I’ve tried so far! The addition of bacon and cayanne to an otherwise traditional method takes it over the top. Yum!

This is really good and easy to make. I probably used 2 tbs of brown sugar on each side and next time I need to bake it a bit longer than 1 hour. The kids even liked it!
