Description

Simple basmati rice made with fried onions and cashew nuts. A must-try easy Indian recipe to make at home if you are new to Indian cuisine.

Ingredients

  • 1 cup Basmati Rice
  • 2 cups Onion, Sliced
  • ¼ cups Cashews
  • 4 Tablespoons Cooking Oil, Plus More Oil For Frying Onion And Cashews
  • 1 Tablespoon Butter
  • 2 teaspoons Cumin Seeds
  • 1 stick Cinnamon
  • 4 whole Cloves
  • 2  Serrano Peppers
  • ¼ cups Mint Leaves
  • 2 cups Water
  • 5-½ teaspoons Salt

Preparation

Soak the basmati rice in water for 20 minutes. Drain and set aside.

Meanwhile, fry onion and cashews until golden brown. Transfer to a kitchen towel and set aside.

In a pan, add cooking oil and butter, followed by cumin seeds, cinnamon, cloves. Fry until fragrant. Add serrano peppers and mint leaves. Saute for few seconds.

Add water and bring to boil. Add basmati rice and cook about 3/4 cooked. Add fried onion, cashews and salt and cook for 8 minutes over low heat.
