Salty bacon, sweet maple syrup and aromatic garlic and rosemary make these squash wedges delicious. This recipe converted a squash-hating cook!
Preheat oven to 350 F. Line a rimmed baking sheet with parchment paper for easy cleanup. You can leave this step out if you wish.
Carefully cut squash into 8 even-sized wedges.Scrape the seeds and membrane from squash pieces using a teaspoon or grapefruit spoon. Lay the squash pieces on the baking sheet, cut side up. Season with salt and pepper.
In a small bowl mix together bacon, garlic, rosemary and maple syrup. Divide bacon mixture among squash pieces.
Bake for 35-45 minutes or until bacon is brown and squash is tender. Enjoy!
Finally a squash recipe I enjoy! The salty bacon and savoury garlic and rosemary are perfect complements to the sweet squash. A delicious side dish with roasted meat, or a great lunch dish on a bed of dark greens with a maple vinaigrette.
