Description

Not a pizza! A crispy, delicious snack or appetizer. Nacho pie also makes a great light dinner, accompanied by a citrus-dressed salad. The crust does not behave like a pizza crust, so you’ll need a fork. And a beer.

Ingredients

  • 7 ounces, weight Tortilla Chips
  • 2 whole Eggs
  • 1-½ cup Grated Cheddar Cheese
  • ½ cups Your Favourite Salsa
  • 1 whole Green Or Red Pepper, Stem And Seeds Removed, Sliced

Preparation

Preheat oven to 400 F.

Process tortilla chips in a food processor until they form fine crumbs. Crack 2 eggs into the crumbs and process until mixture begins to cling together.

Press mixture over the surface of 12-inch pizza pan. It won’t seem like enough, but wet your hands and persist. I often finish up by rolling it out a bit more with a full beer bottle or jam jar.

Bake crust for 10 minutes. Remove it from the oven and top with half of the cheese, then top with the salsa, pepper slices and a last layer of cheese.

Bake until the cheese melts, about 4 minutes. Remove from oven. Serve cut into wedges.
