Sometimes you just want a quick dinner or side dish, and how could you say no to one that involves bacon?
Prepare the rice according to package directions.
While the rice is cooking, begin to fry the diced bacon in a large pot over medium-high heat for about 2 minutes or until the fat begins to render. Add the onions and cook until the bacon is crisp and onions are translucent. Mix in the frozen veggies and stir every few minutes until heated through.
In a small bowl, whisk the egg and milk. Pour over the bacon and vegetable mixture, stirring until the egg is fluffy. Add the cooked rice and remaining ingredients and stir until all is combined.
