Authentic Mexican rice to go with all your favorite Mexican meals.
Blend tomatoes, onion, garlic, salt and water in a blender until well blended. Set aside.
Heat oil in a pot over medium heat. When hot, add rice. Fry until rice is golden brown. Add blended tomato sauce, peas, carrots, and chicken bouillon to the pot and stir once.
Bring to a boil, reduce heat to low and simmer for about 25 minutes. Remove rice from heat and fluff with a fork. Serve.
