A fast and easy low carb, high fat side dish. Spinach is a great source of potassium! Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, sugar free, dairy free option.
Melt butter in medium to large skillet over medium heat. Add onion; cook onions until translucent and starting to brown.
Add spinach. Leave for a couple of minutes, then toss with tongs or flip with a spatula. Leave a couple more minutes. Keep turning until spinach is just wilted. Add salt and pepper to taste.
Add cream. Stir well to mix in cream. Turn off heat. Keep stirring until cream reduces and mixes in with spinach, just another minute or two. Serve.
