Description

A fresh and healthy side dish that is “fancy” enough for company!

Ingredients

  • 2 pounds Asparagus
  • 3 Tablespoons White Wine Vinegar
  • 1 teaspoon Dijon Mustard
  • ½ cups Olive Oil
  • 6 ounces, weight Goat Cheese
  • 1 Tablespoon Minced Parsley
  • 1 Tablespoon Minced Red Onion

Preparation

Steam the asparagus for three minutes, until bright green and crisp-tender. Rinse under cold water, drain thoroughly and dry with paper towels.

Arrange asparagus on a platter and season with salt and pepper. Beat the vinegar and mustard together until smooth. Beat in the olive oil. Crumble the goat cheese over the asparagus and drizzle with the dressing (see note below). Sprinkle with herbs and onion and serve.

Note: I only use about 2/3 – 3/4 of the dressing.

This was amazing – I loved the tangy goat cheese combined with the vinegar! I usually love asparagus in any form, cooked any way, but my husband has a strange aversion to most things green. Usually I can convince him to eat 2-3 stalks of asparagus and that’s it. With this recipe I had to keep him from eating the entire pan! And he said I could make this every day. Highest compliments from a very picky man!

We really liked this! I roasted the asparagus instead of steaming (just personal preference), and I used balsamic vinegar because that’s what I had. It was so good!

I tried this tonight and it was a big hit. The way I made it though it wasn’t very pleasing to the eye, but when my family tried it they all loved it. It was delicious! I plan on making it again.

Megan, this looks so, so good! I love asparagus. I love goat cheese. Together? I’m sure it’s divine! I can’t wait to try it soon!

I loved your combination of the asparagus with the goat cheese. I served this last night but changed it up to suit my tastes. I did try to make the dressing you as written but didn’t like it when I tasted it so I used my own balsamic dressing. Served the steamed asparagus warm with the goat cheese and lighly warmed balsamic dressing over it. The goat cheese melted slightly and was awesome with the asparagus. Thanks for the idea !

This is amazing! My husband (who doesn’t really care for vegetables) told me he would fight me to finish the asparagus. We have made it often and love it just as much every time!
