This recipe is very flexible. You can use chicken, pork, shrimp, ham, tofu or skip the meat altogether. Feel free to substitute any combination of veggies that you have on hand: peas, carrots, broccoli, asparagus, bell peppers, mushrooms, zucchini … well, you get the idea. You can even use packaged, precooked brown rice. This can be a meal in itself!
Combine chicken broth, teriyaki sauce, soy sauce, coriander and ginger in a small bowl and set aside.
Heat 1 tablespoon of peanut oil in a large skillet. Fry eggs until just set. Remove from the pan.
Add remaining peanut oil to the skillet and let heat. Add garlic, carrots, mushrooms and red pepper and stir fry until tender, about 5 minutes. Add the rice, peas, chicken or pork, eggs and scallions and cook until heated through, about 2 minutes.
Pour the chicken broth mixture over the rice and stir fry until liquid is absorbed, about 1-2 minutes.
Garnish with chopped cashews or peanuts, if desired.

This was awesome! I love that it’s totally “tweakable”, too, but this was a great recipe for rice. It was flavorful and declicious.
