Description

Who knew acorn squash was so delicious? Not me! It was not something I liked at all. Ever! Until now. This was so easy and so delicious and I decided to add apple cider to my sauce and that made it even more delicious.

Ingredients

  • 1 whole Acorn Squash
  • ½ cups Water
  • 2 Tablespoons Butter
  • 1 Tablespoon Apple Cider
  • 1 Tablespoon Maple Syrup
  • 2 Tablespoons Brown Sugar

Preparation

Preheat oven to 400ºF.

Cut the acorn squash in half and place in a baking dish. Score the squash on the inside with a knife (make several tiny cuts into the squash). Put the water in the bottom of the baking dish.

Over medium heat, melt the butter in a saucepan. Add the apple cider, maple syrup and brown sugar. Stir for approximately 15 minutes until the brown sugar is completely dissolved. Remove from heat and pour into the cavity of the acorn squash.

Take a pastry brush and dip into the sauce. Brush on the edges of the acorn squash before baking.

Bake for 1 hour.

I’m going to make this tonight. I’ve never cooked acorn squash but I just bought some at the farmer’s market for a great price.
