Love, love, LOVE this recipe!!!!!
Set oven to broil. Slice eggplant and tomatoes about 1/2 inches thick. Rough chop basil (I cut mine into ribbons). Brush both sides of eggplant with olive oil. Place eggplant on baking sheet and broil on both sides until brown. Take out and place a slice of tomato on each slice of eggplant. Then place a slice of mozzarella on top of the tomato. Place back into the broiler until cheese is bubbly and brown (like pizza). Top with fresh basil and enjoy! (May top with salt if needed)

Tried this last night and we LOVE it! My husband say’s it is a keeper. Great find and very healthy too.
