This tasty cheese dip makes a lot. I start getting requests for it right after Labor Day and the requests do not stop till the 4th of July.
Brown 4 pounds of ground chuck along with the chopped onion. Drain off grease.
Put browned ground chuck into crock pot.
Add 3 cans of Rotel tomatoes.
Add 1 bottle of salsa.
Gradually add Velveeta cheese.
Cook on low for 2 hours stirring as needed.
After all cheese is completely melted, add sour cream.
Do not let it come to a boil after the sour cream has been added or it will separate.
Serve with tortilla chips.
