This recipe is similar to traditional fudge, but uses white chocolate and is slightly sweeter. Add walnuts for a good foil to the sweetness.
Bring sugar, butter and evaporated milk to a boil, stirring constantly. When the mixture reaches approximately 235 degrees (per a candy thermometer), remove from heat.
Stir in marshmallow cream and chocolate squares. When smooth, add vanilla and stir. Fold in walnuts.
Pour mixture into a 9 by 13 pan lined with foil or waxed paper. Let cool for approximately 5 hours before cutting into squares. Yields 24 or more pieces, depending on size.
